Soft tacos
Ingredients:
6 tortillas
2 tomatoes
2 medium sized onions
3 cloves garlic
2 cups canned or boiled beans
1/2 cup boiled corn
1/2 cup sliced bell peppers (each)
Hung curd dip (See recipe on blog) optional
2 tbsp paprika powder (red chilly powder)
2 tbsp salt
Oregano and chilly flakes
Method:
Veggies:
1. In a pan add butter or olive oil and saute the bell peppers and corn.
2. Add chilly flakes and oregano, remove from the flame and set aside
Gravy:
1. Chop the onion and tomatoes in large squares or halves
2. In a pan add some oil and saute the tomatoes, garlic and onions
3. Make two separate purees of tomato and of onions + garlic
4. Add oil in a wok or kadhai and add the tomato puree
5. Cook well until it starts to become brown and the quantity reduces to half
6. Add the onion paste and mix well
7. Keep cooking for another 3-4 mins and then add the boiled beans with its stock or canned beans with water.
8. Make the consistency as thick and dry as possible to ensure that the tortillas don't get soggy.
9. Add the paprika powder and salt
Assembly
1. In your tortillas spread any dips and sauces of your choice. (Recommended: Salsa and Hung Curd see recipe in blog)
2. Add the vegetables and saute
3. Finally add the rajma/beans gravy and wrap the tortilla or fold it in half.
4. Serve and Enjoy!
